Sweet Jerky recipe

1/2 kilo pork tenderloin
can of Pepsi (NOT COKE, Pepsi is sweeter i found, or try Dr Pepper if you prefer )
3 cloves garlic finely diced
3 chillies (personally as hot as I can find, the heat dies down when mixed with the other stuff)
cup full 50/50 mix with half soy sauce and maple syrup (thats hard to come by in the uk)
small bit of pepper, not salt needed because the soy should fill that role
1.first up slice your pork up thin, 1/4 inch thick
2. mix all the other ingredients together, try and resist the temptation of throwing all sorts of other stuff in the mix (scotch bonnet chillies, Jack Daniels). That stuff is good for jerky if your making a spicy one but i'm making sweet.
3. add the beef and let it marinade over 24 hours, 4 hour minimum but the longer you wait the more the meat soak up the flavour.
4. now cook it on a tray wrapped in tinfoil at 140 F for 3-4 hours (slow and low people)
5. Try a bit out, you'll know if it needs any longer by the taste
